How to suspend or Resume BitLocker Protection in BitLocker Manager
Windows 10: Turn On or Off BitLocker for Operating System Drive in Windows 10. Open the Control Panel (icons view), and click/tap on the BitLocker Drive Encryption icon. You will not see this step if you did above. Enter a PIN - This option allows you to unlock the operating system drive with a 6-20 digit PIN. This article will introduce five solutions to disable, turn off, remove Bitlocker drive encryption in Windows 10: Solution 1: Disable Bitlocker from Control Panel. Step 1: Open the Search bar and type Control Panel. Step 2: Double-click Bitlocker Drive Encrypition. Step 3: Expand the related Bitlocker encrypted drive. Step 4: Click Turn off Bitlocker. Step 5: Click Turn off Bitlocker in the window.
Step 1: Click on the Start Menu. In the search box, type 'Manage BitLocker', then hit Enter to open the Manage BitLocker window.
Step 2: Click Suspend protection for the desired drive.
Return to the Manage BitLocker window to Resume protection.
How to Suspend/Resume BitLocker Protection in Command Prompt
Step 1: Press Win + X, and A on the keyboard, it will open Command Prompt as an Administrator.
To enable suspend BitLocker protection for the drive, run the following command, then hit Enter. (Replace H with the drive letter that you want to suspend protection.)
manage-bde -protectors -disable H:
To resume BitLocker protection for the drive, run the following command:
manage-bde -protectors -enable H:
How to Suspend/Resume BitLocker Protection in PowerShell

To suspend the drive's BitLocker Protection for the system and fixed data drives, run the following command and press Enter. Replace H with the drive letter that you want to suspend protection.
Suspend-BitLocker -MountPoint 'H:'
To resume BitLocker Protection, run the following command and press Enter.

I was told that Windows 10 should have Bitlocker available to be enabled but it is not. Did the free version of Win 10 not include this? I need encryption in order to use the Mail app for my work exchange email.

BitLocker is only available in Pro and Enterprise editions of Windows 10, if you've got Windows 10 Home then that feature won't be available to you.
There is a nice explanation of what edition of Windows 10 you will have after your free upgrade on the Microsoft site, but I'll do my best to replicate it here:
